Very Special

This exotic varietal originated in Kenya in the 1930s. The seeds were later spread to other coffee-growing regions across Africa, including Uganda, and eventually to Latin American countries. This varietal is quite rare in Colombia. Planted in 2019 at Jardines del Edén, Cofinet observed how well it adapted and thrived in the unique climate and geography of Quindío.

Felipe and Cofinet

Felipe Arcila is one of the co-founders of Cofinet, alongside his brother Carlos Arcila. They are the fourth generation of coffee growers in their family. Their father, Jairo Arcila, is a third-generation coffee grower from Quindío. Jairo had once advised his sons that the coffee industry was not profitable due to the many economic challenges he had faced. Taking his advice to heart, Felipe and Carlos pursued careers in civil engineering and moved to Australia to continue their master’s degrees.

While in Australia, Felipe was captivated by the local coffee culture and was inspired to be part of it. After completing his studies and returning to Colombia, he became more involved in coffee and began studying Specialty Coffee. Felipe and Carlos then acquired Jardines del Edén, where they focused on growing exotic coffee varieties. In 2015, they founded Cofinet, marking the beginning of their journey to produce, source, and export Specialty Coffee to the world.

Processing

This coffee is harvested using strict ripeness standards, then floated and hand-sorted to remove any defects. The cherries undergo 30 hours of underwater fermentation before being pulped. Afterward, the parchment is gently washed and dried under temperature-controlled conditions until the ideal moisture content is reached.

Fresh harvest sourcing

We only source and roast coffee from each country’s latest harvest season (so the green coffee is never older than 1 year from the time of picking, processing and packing).

This ensures the sensory qualities are always at their peak and unaffected by excessive ageing.

Brewing coffee at home

Best brewed 15–49 days post-roast

When you leave your whole beans to rest (inside the sealed bag) until our recommended window, you’re brewing at optimum flavour and acidity.

This time allows for the gas compounds, absorbed during the roasting process, to leave the coffee. If you brew too early, it may not be bad, but you’ll miss out on each coffee’s best flavour.

What is ‘specialty coffee’?

The definitions and references to specialty coffee are tricky, if not controversial.

Historically, and as most people see it these days, specialty coffee is Arabica beans that score over 80 in the old Specialty Coffee Association point scale. Today, the SCA refers to specialty coffee as “a coffee or coffee experience that is recognised for its distinctive attributes, resulting in a higher value within the marketplace.”

Our single origins are Arabica +85 SCA score and our blend components Arabica +80, which could be considered ‘true specialty’ coffee. Though we prefer to use the term ‘high quality’ and back this claim with solid traceability data.
