Flores Family

The Flores family has been in coffee production since the 1970s, rooted in the Cajarmarca region. Finca El Morito was founded by the patriarch of the Flores family, Faustino Flores, starting in 2009 when the Flores family relocated to the San Ignacio province of Cajamarca. With a passion for innovation and a focus on quality, the Flores family have steadily improved in both quality and variety of production on their farm. As a close knit family and community, the second and third generations have progressed and expanded on Faustino’s work to bring the family estate and community to where it is today.

El Morito and Fredesvinda

Concentrating in the northern region of Cajamarca the Finca El Morito have expanded internally by creating a familial community of producers, with 70% of coffee produced direct from family estates, and the remaining producers are within the immediate communities of the Flores Chilcon family. Today, quality production from Finca El Morito comprises of coffees from the Cutervo and San Ignacio Provinces of Cajarmarca. As a result of his hard work, the legacy of Faustino Flores and Finca El Morito have been rewarded by placing multiple times in the Cup of Excellence auctions, as recent as 2022.

This lot was produced by Fredesvinda Estela. Fredesvinda Estela is a young coffee farmer who along with her husband David Flores, raise and support their two children through coffee farming. Since starting her farm in 2017, she has consistently made positive changes and improvements to her plots and infrastructure. Thanks to those changes, her coffees have become renowned for their consistency, unique profiles and high cup scores; which she takes great pride in. Fredesvinda grows a number of varietals on her farm including Caturro Amarillo (Yellow Caturra), Bourbon, Marshell and Catuai.

Fresh harvest sourcing

This coffee was harvested in August 2025.

We only source and roast coffee from each country’s latest harvest season (so the green coffee is never older than 1 year from the time of picking, processing and packing).

This ensures the sensory qualities are always at their peak and unaffected by excessive ageing.

Brewing coffee at home

Best brewed 15–49 days post-roast

When you leave your whole beans to rest (inside the sealed bag) until our recommended window, you’re brewing at optimum flavour and acidity.

This time allows for the gas compounds, absorbed during the roasting process, to leave the coffee. If you brew too early, it may not be bad, but you’ll miss out on each coffee’s best flavour.

What is ‘specialty coffee’?

The definitions and references to specialty coffee are tricky, if not controversial.

Historically, and as most people see it these days, specialty coffee is Arabica beans that score over 80 in the old Specialty Coffee Association point scale. Today, the SCA refers to specialty coffee as “a coffee or coffee experience that is recognised for its distinctive attributes, resulting in a higher value within the marketplace.”

Our single origins are Arabica +85 SCA score and our blend components Arabica +80, which could be considered ‘true specialty’ coffee. Though we prefer to use the term ‘high quality’ and back this claim with solid traceability data.
