Origin story and details

Producer: Anderson Felipe Chito Imbachi
Farm / Cooperative: Finca Buena Vista
Region: Huila, Colombia
Altitude: 1780m above sea level

Nestled among the picturesque mountains near the municipality of San Agustin lies a renowned farm called Buena Vista. It is here that Anderson, driven by an unwavering passion for coffee that runs through his veins, dedicates himself to his craft. Coffee cultivation runs deep in his family, with his revered grandfather, Carlos Imbachi, along with his uncles and parents, all actively involved in the farm. Drawing inspiration from his grandfather’s illustrious reputation for producing high-quality coffee, Anderson aspires to achieve the same level of recognition worldwide.

Buena Vista operates as a close-knit family business, with each member contributing in their own unique way. Anderson’s grandmother and mother provide nourishing meals for the workers, his grandfather oversees the administration of the farm and manages the wet milling processes, while Anderson and his uncles lend their expertise to cherry picking, fertilization, weed control, and transporting the coffee to the purchasing station. Since 2018, Anderson has been actively involved in the coffee industry, passionately upholding the legacy of his family and his esteemed grandfather.

Anderson’s meticulous coffee production process begins with the careful manual selection of the ripest cherries, which are promptly delivered to the farm’s wet mill. On the same day, the cherries are pulped in the afternoon and allowed to ferment for 36 hours in traditional open-air tanks. After fermentation, the coffee undergoes a couple of washes before being spread out on covered patios or raised beds to dry. With regular rotations twice a day, the coffee gradually reaches its optimal moisture content over a period of approximately 12 days. Once the drying process is complete, the coffee is carefully stored and eventually transported to Caravela’s purchasing station in San Agustin.

Fresh harvest sourcing

This coffee was harvested in May 2024.

We only source and roast coffee from each country’s latest harvest season (so the green coffee is never older than 1 year from the time of picking, processing and packing).

This ensures the sensory qualities are always at their peak and unaffected by excessive ageing.

Brewing coffee at home

Best brewed 15–49 days post-roast

When you leave your whole beans to rest (inside the sealed bag) until our recommended window, you’re brewing at optimum flavour and acidity.

This time allows for the gas compounds, absorbed during the roasting process, to leave the coffee. If you brew too early, it may not be bad, but you’ll miss out on each coffee’s best flavour.

What is ‘specialty coffee’?

The definitions and references to specialty coffee are tricky, if not controversial.

Historically, and as most people see it these days, specialty coffee is Arabica beans that score over 80 in the old Specialty Coffee Association point scale. Today, the SCA refers to specialty coffee as “a coffee or coffee experience that is recognised for its distinctive attributes, resulting in a higher value within the marketplace.”

Our single origins are Arabica +85 SCA score and our blend components Arabica +80, which could be considered ‘true specialty’ coffee. Though we prefer to use the term ‘high quality’ and back this claim with solid traceability data.
